- Combination of all updates (theme/plugin/core) into a single variable - most of my clients don't know the difference. it's all "software" to them.

Just off the top of my head:
Hide the line if variable = 0 (eg '0 core updates' looks bad even if we know it's just because there weren't any within that period).
Combination of all updates (theme/plugin/core)
Number of vulnerability scans
Vulnerabilities detected/Threats blocked (ideally linking with Patchstack for any data from that if ever possible in the future)

Would be very useful to add a timestamp shortcode for the email subject and email body for reports, as it would make the emails unique instead of piling up in the same group/conversation.

I would like to have an additional option to simplify the existing date-based variables with simply the "Month Year" of the report (specifically looking to add this to the Email Subject line, but it would be nice to have for the PDF, as well)

This is actually a feature where MainWP is more flexible. There, I can add any number of custom variables and display them in my reports. I have done this with a link to the clients Plausible Analytics dashboard, for example (as MainWP is also missing a Plausible integration, same as WP Umbrella).

I agree to Michel. Customzied reports per client are a good solution. A current screenshot from the reported site would be great too.
