WP Umbrella already sends us alerts when vulnerabilities are discovered in a specific plugin or theme. It would be great if when this happens the plugin/theme is automatically updated.

This is now possible with our update automation feature.

Aurelio Volle not a good idea the way it currently is working with sudden downtime, t.ex. during Black Friday etc., it surely needs improvements: https://wp-umbrella.canny.io/features-request/p/service-window-for-vulnerability-updates

Amazing idea, but only optional and to activate for specific plugins - not just automatically for every plugin/theme.

A full patch stack integration could help here. Patching the plugin rather than updating until an update is out.

This would need to be optional, there are plugins or themes that can't be updated (at least for a certain time); these obviously need specific risk mitigation strategies.
